Add 2 cups of water to a medium-sized pot.

Stir in 1/2 cup of organic cane sugar until dissolved.

Add the sliced orange, lemon, and lime to the pot.

Add the 1 inch of sliced fresh ginger to the pot.

Add the 2-inch cinnamon stick, 1/2 teaspoon of coriander seed, and 1/4 teaspoon of star anise to the pot.

Bring the mixture to a boil over medium-high heat, then reduce the heat to low and let it simmer for 15 minutes, allowing the flavors to meld.

Remove the pot from the heat.

Stir in 2 tablespoons of vanilla extract.

Let the mixture cool completely to room temperature. This will take approximately 1 hour.

Strain the cooled mixture through a fine-mesh sieve, separating the cola syrup from the solids, into a clean jar or bottle. Discard the solids.

To serve, pour approximately 1/4 cup of the cola syrup into a glass.

Top the syrup with sparkling water, adjusting to your preferred strength.

Garnish with a fresh lime slice.
