Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.

In a medium bowl, crack 2 large eggs and whisk them well with a fork until the yolks and whites are fully combined.

Add the peeled and pitted avocados to the bowl with the mixed eggs. Mash the avocados and eggs together using a fork until well combined and relatively smooth. A few small lumps are fine.

Stir in the shredded cheese into the avocado-egg mixture. Blend all ingredients well until fully incorporated.

Spoon the avocado mixture onto the prepared baking sheet, forming 8 flat, round shapes, each approximately 3-4 inches in diameter and about 1/4 to 1/2 inch thick. These will resemble bread slices.

Generously sprinkle everything bagel seasoning over the top of each avocado bread shape.

Bake the avocado bread in the preheated oven for 15-18 minutes, or until golden brown and set. They should be firm enough to handle. While the avocado bread is baking, proceed to prepare the scrambled eggs.

In a separate bowl, crack the remaining 4 large eggs. Whisk them with salt and pepper until well combined.

Heat butter or olive oil in a non-stick skillet over medium heat. Pour in the whisked eggs. As the eggs begin to set, gently push them from the edges towards the center, allowing the uncooked egg to flow underneath.

Once the eggs are mostly set but still a little wet, add the cottage cheese to the pan. Continue to cook and gently mix until the cottage cheese is warmed through and combined with the scrambled eggs. Remove from heat.

Once the avocado bread is done, carefully remove it from the baking sheet. Place one piece of avocado bread on a plate.

Spoon a generous portion of the scrambled eggs with cottage cheese on top of the avocado bread.

Place a second piece of avocado bread on top to complete the sandwich. Repeat for the remaining sandwiches.

For easier eating, cut each sandwich in half before serving immediately.
