Prepare the potatoes and onions: Peel the yellow potatoes and slice them thinly into 1/8-inch rounds. A mandoline slicer works best for uniform slices. Peel the yellow onions, halve them, and thinly slice them.

Combine ingredients: In a large bowl, combine the sliced potatoes and onions. Add the melted unsalted butter, vegetable broth, garlic powder, dried thyme, salt, and black pepper. Toss gently until all the potatoes and onions are evenly coated.

Layer in slow cooker: Lightly grease the inside of a 6-quart (or larger) slow cooker. Transfer the potato and onion mixture to the slow cooker, spreading it out evenly.
