Drain the liquid from the can of lychees using a sieve placed over a bowl. Reserve the drained lychees.

In a saucepan, combine the granulated sugar and agar-agar powder.

Add the water to the saucepan with the sugar and agar-agar powder.

Stir the mixture in the saucepan until the dry ingredients are fully combined with the water.

Place the saucepan on a stove over medium-high heat and bring the mixture to a boil, stirring occasionally to prevent sticking.

Once the mixture is boiling, use a ladle or spoon to skim any foam that forms on the surface.

Pour approximately half of the hot, plain agar-agar mixture into a clear rectangular dish (approximately 23x33 cm).

Carefully arrange the drained lychees in the dish on top of the initial layer of agar-agar mixture, ensuring they are evenly spaced.

Allow this first layer to set slightly at room temperature until it is firm enough to hold the lychees in place without disturbing them (this usually takes about 10-15 minutes).

To the remaining hot, plain agar-agar mixture in the saucepan, add the Vimto Mixed Fruit Cordial.

Stir the Vimto-infused agar-agar mixture until the cordial is evenly combined and the liquid has a consistent color.

Carefully ladle the Vimto-infused agar-agar mixture over the partially set lychee layer in the dish.

Let the entire jelly set in the fridge for at least 1 hour, or until completely firm.

Once fully set, remove the jelly from the fridge.

Using a sharp knife, cut the jelly into individual rectangular pieces.

Optionally, use a crinkle cutter to add decorative edges to the cut jelly pieces for presentation.

Serve the Vimto Lychee Agar-Agar Jellies chilled.
