Preheat your oven to 400°F. Place the cherry tomatoes in a 9x13 inch baking dish.

Drizzle the olive oil over the cherry tomatoes. Place the block of Boursin cheese in the center of the tomatoes.

Arrange the chicken pieces around the Boursin cheese and tomatoes. Add the minced garlic over the chicken and tomatoes.

Season generously with salt and black pepper. Using a spatula, gently mix the tomatoes, chicken, garlic, salt, and pepper around the cheese, being careful not to disturb the Boursin block too much.

Bake the dish in the preheated oven for 30 minutes, or until the tomatoes have burst and the chicken is cooked through.

While the dish is baking, cook the short pasta according to package directions until al dente. Drain the pasta and set aside.

Once baked, remove the dish from the oven. The cheese should be melted and the tomatoes burst. Stir the contents of the baking dish, mashing the melted cheese and burst tomatoes with a spoon or spatula to create a creamy sauce.

Add the fresh spinach to the baking dish. Add the cooked pasta to the baking dish.

Mix everything thoroughly until well combined and the spinach has wilted into the sauce.

Serve the Boursin Tomato Pasta immediately in bowls.
