Preheat the oven to 170°C (fan assisted) or 190°C (conventional).

In a mixing bowl, cream together the softened salted butter, vanilla extract (or bean paste), salt, and icing sugar until the mixture is light and fluffy.

Add the plain flour and custard powder to the creamed mixture. Mix until a soft dough forms.

Place the dough between two sheets of baking parchment and roll it out to an even thickness of about 5 mm.

Chill the rolled dough in the refrigerator for 20–30 minutes to firm it up, making it easier to cut.

Once chilled, remove the dough and cut it into desired biscuit shapes. Carefully transfer the cut biscuits to a baking tray lined with baking parchment.

Bake the biscuits in the preheated oven for 10–12 minutes, or until their edges are just beginning to turn golden.

Remove the biscuits from the oven and allow them to cool completely on the baking tray or a wire rack before proceeding to the filling.

While the biscuits cool, prepare the filling. In a clean bowl, beat together the softened salted butter, icing sugar, custard powder, a very small pinch of fine salt, and vanilla extract (or bean paste) until the mixture is pale and fluffy.

If the filling is too stiff, add 1 teaspoon of milk and beat until it reaches a spreadable consistency.

Once the biscuits are completely cool, spread a generous amount of the prepared filling onto the flat side of one biscuit. Place another biscuit on top, flat side down, to create a sandwich.

Repeat with the remaining biscuits and filling. Serve your homemade Custard Cream biscuits with a cup of tea.
