Preheat your oven to 375°F (190°C). Line a baking tray with parchment paper.

In a large mixing bowl, combine the self-raising flour and Greek style natural yogurt. Mix with a wooden spoon until a shaggy dough forms.

Transfer the dough to a clean, lightly floured countertop. Knead briefly by hand for 1-2 minutes until the dough comes together smoothly.

Using a rolling pin, flatten the dough into a roughly rectangular or oval shape, about 1/4 inch thick.

Using a knife, cut the flattened dough into approximately 7-8 individual portions.

Take one portion of dough and flatten it further with a rolling pin or by hand. Place a small amount of shredded cheese in the center.

Carefully fold the edges of the dough over the cheese, pinching and sealing them together to form a round, enclosed ball. Repeat for all remaining dough portions.

Arrange the formed cheese bombs on the prepared baking tray.

Bake in the preheated oven for 10-12 minutes, or until the cheese bombs are golden brown and cooked through.

While the cheese bombs are baking, prepare the optional topping. In a small bowl, combine the melted butter, minced garlic, and dried herbs.

Once baked, remove the cheese bombs from the oven. Using a pastry brush or fork, generously brush the topping mixture over the warm cheese bombs.

Serve the cheese bombs warm and enjoy!
