Heat olive oil in a large skillet over medium-low heat. Add the sliced sweet onions and cook, stirring occasionally, for 15-20 minutes, or until softened and translucent.

Stir in the brown sugar and balsamic vinegar. Continue to cook for another 5-7 minutes, stirring frequently, until the onions are deeply caramelized and sticky. Remove from heat and let cool slightly.

Preheat oven to 400°F. Line a baking sheet with parchment paper.

Unroll the thawed Trader Joe's puff pastry sheet onto a lightly floured surface. Cut the pastry into 16 squares.
