In a large mixing bowl, combine the plain flour, brown sugar, white sugar, and baking powder.

Add the melted butter, eggs, and a splash of vanilla to the bowl. Pour in the chocolate chips.

Mix all ingredients thoroughly with a spatula until a cohesive dough forms.

Lay out a piece of cling wrap on a clean surface. Transfer the cookie dough onto the cling wrap and form it into a log shape. Wrap the dough securely in the cling wrap.

Chill the wrapped dough log in the refrigerator for 30 minutes to allow it to firm up.

Once chilled, place the dough log on a cutting board. Using a knife, cut the dough log into slices, approximately a finger's width each.

Unwrap each cookie dough slice and place the discs onto a baking tray lined with parchment paper.

Bake the cookies in a preheated oven at 160°C for 15 minutes or until they are light brown. Alternatively, if using an air fryer, bake at 160°C for 7 minutes.
