Preheat your oven to 180°C (350°F).

In a large mixing bowl, combine the dry ingredients for the pudding: 1 cup flour, 1 cup sugar, and 1 tablespoon baking soda. Whisk them together thoroughly to ensure even distribution.

In a separate medium bowl, crack 1 egg. Add 1 to 3 tablespoons of apricot jam, 1 tablespoon of vinegar, 1 tablespoon of melted butter, and 1 cup (250ml) of milk. Whisk these wet ingredients together until well combined.

Pour the wet ingredient mixture into the bowl containing the dry ingredients. Mix everything thoroughly with a whisk or spatula until a smooth batter is formed, being careful not to overmix.

Pour the batter into a baking dish (a rectangular glass dish works well).

Bake the pudding in the preheated oven for 30 minutes, or until golden brown and a skewer inserted into the center comes out clean.

While the pudding is baking, prepare the sauce. In a saucepan, combine 1/2 cup cream, 1/2 cup milk, 1 cup (250g) sugar, 1/2 cup (125ml) hot water, and 1/2 cup (125g) butter.

Heat the sauce mixture on the stove over medium heat, stirring continuously until the butter is completely melted and the sugar is dissolved. Bring it to a gentle simmer, then remove from heat.

Once the pudding is removed from the oven, immediately pour the hot sauce evenly over the hot pudding. Ensure the sauce covers the entire surface.

Let the pudding soak in the sauce for 5-10 minutes. This allows the sauce to be fully absorbed, making the pudding moist and delicious.

Serve the Malva Pudding warm, optionally with a dollop of fresh cream or a side of custard.
