Prepare the rosemary simple syrup: In a small saucepan, combine 1/2 cup water and 1/2 cup granulated sugar. Add the fresh rosemary sprig. Heat over medium heat, stirring until the sugar is completely dissolved. Bring to a gentle simmer, then remove from heat and let the rosemary infuse for at least 5 minutes. Strain the syrup into a clean container, discarding the rosemary. Let it cool completely.

Brew 8 fluid ounces of espresso. Allow it to cool completely, or chill it in the refrigerator for about 5 minutes to speed up the process.

While the espresso chills, prepare the orange zest. Using a microplane or fine grater, carefully zest the entire orange. Avoid grating the white pith, as it can be bitter. Slice the orange into thin rounds for garnish.

Divide the ice equally among four tall glasses. Add 1/4 cup of chilled tonic water to each glass.

Carefully pour 2 fluid ounces of the chilled espresso into each glass over the tonic water and ice. The espresso should float slightly on top, creating a beautiful layered effect.

Add 1 tablespoon of the cooled rosemary simple syrup to each glass, or adjust to your preferred level of sweetness. Gently stir each drink to combine the flavors.
