In a large bowl, combine the cut Yukon Gold potatoes, olive oil, minced garlic, kosher salt, and freshly ground black pepper. Toss well to ensure all potato pieces are evenly coated.

Spread the seasoned potatoes in a single layer on the prepared baking sheet. Ensure there's enough space between the pieces to allow them to crisp up, avoiding overcrowding.

Roast the potatoes in the preheated oven for 20 minutes. After 20 minutes, remove the baking sheet from the oven and use a spatula to flip the potatoes, ensuring even browning.
