In a medium mixing bowl, combine the soy sauce, gochujang, brown sugar, sesame oil, and mirin. Whisk the ingredients together until well combined and the brown sugar has dissolved. Set aside.

Place the ground pork in a large skillet or pan over medium-high heat. Cook the pork, breaking it up with a wooden spatula, until it is mostly browned and has started to crisp up, about 7-8 minutes.

Once the pork is mostly cooked, drain any excess fat. Add the diced yellow onion, minced garlic, and minced ginger to the pan with the pork. Sauté for about 1 minute, until fragrant.

Pour the prepared sauce mixture into the pan with the cooked pork and aromatics. Stir thoroughly with a wooden spatula to ensure all the pork and vegetables are evenly coated in the sauce. Continue to cook for 2-3 minutes, allowing the sauce to thicken slightly and coat the pork.

While the pork is cooking, if desired, fry the eggs sunny-side up in a separate pan until the whites are set and the yolks are still runny.
