Place the chicken thighs into a large mixing bowl.

Add all the dry seasonings to the chicken: 2 tablespoons of minced garlic, 1 tablespoon of onion powder, 1 tablespoon of smoked paprika, 1 teaspoon of black pepper, 1 tablespoon of chicken bouillon, and 1 teaspoon of cayenne pepper.

Pour in the wet ingredients: 2 tablespoons of olive oil, 2 tablespoons of soy sauce, 1 tablespoon of Dijon mustard, and 1 tablespoon of lime juice.

Mix everything thoroughly until each chicken thigh is completely coated with the marinade.

Cover the bowl with plastic wrap and let the chicken marinate in the refrigerator for at least 30 minutes. For best results, you can marinate for up to 4 hours.

Preheat your grill to medium-high heat (approximately 375-400°F).

Carefully place the marinated chicken thighs on the preheated grill, skin side down if applicable.

Grill the chicken for 5 to 7 minutes per side, or until beautiful grill marks appear and the chicken is cooked through. Use a meat thermometer to ensure the internal temperature reaches 165°F.

Once cooked, remove the chicken from the grill and transfer it to a clean plate or cutting board. Let it rest for 5 minutes to allow the juices to redistribute.

Sprinkle the grilled chicken with Maldon salt to taste before serving.

Serve immediately and enjoy your delicious grilled chicken!
