Preheat oven to 400°F. Line a baking sheet with parchment paper.

Toss the sliced sweet potatoes with 1 tablespoon of olive oil, garlic powder, paprika, salt, and black pepper. Arrange them in a single layer on the prepared baking sheet.

Roast the sweet potatoes for 15-20 minutes, flipping halfway through, until tender-crisp. Set aside.

While sweet potatoes roast, prepare the pesto. In a food processor, combine basil, Parmesan cheese, toasted pine nuts, minced garlic, and lemon juice. Pulse until finely chopped.

With the food processor running, slowly drizzle in the 1/2 cup of olive oil until the pesto is smooth. Season with salt and black pepper. Set aside.

Heat a large non-stick skillet over medium-high heat. Add the cubed chicken breast and cook for 5-7 minutes, or until cooked through and lightly browned. Remove from heat.

To assemble the stacks, place a roasted sweet potato slice on a serving plate. Top with a spoonful of cooked chicken, then a dollop of pesto. Repeat with another sweet potato slice, chicken, and pesto, creating 2-3 layers per stack.
