Preheat your oven to 350°F (175°C). Line a large baking sheet with parchment paper.

In a large mixing bowl, combine the shredded carrots, 1/4 teaspoon black pepper, 1/2 teaspoon garlic powder, egg, and shredded mozzarella cheese. Mix thoroughly until all ingredients are well combined.

Spoon the carrot mixture onto the prepared baking sheet, forming four flat, round patties about 3 1/2 to 4 inches in diameter and 1/2 inch thick, resembling burger buns. Bake for 25 minutes, or until golden brown and firm. Remove from oven and set aside.

While the carrot buns are baking, prepare the beef patties. In another mixing bowl, combine the ground beef with 1/2 teaspoon black pepper, turmeric, and 1/2 teaspoon garlic powder. Mix gently until just combined, then divide the mixture into four equal portions and form into flat burger patties, slightly wider than your carrot buns.

Heat a large frying pan or cast iron skillet over medium-high heat. Cook the beef patties for 4-5 minutes per side, or until desired doneness. During the last minute of cooking, place a slice of cheddar cheese on top of each patty to melt.

To assemble the burgers, place one carrot bun on a plate. Top with a lettuce leaf and a few halved cherry tomatoes. Place a cheeseburger patty on top of the vegetables. Drizzle with sriracha mayo, then top with another carrot bun to complete the burger. Serve immediately.
