Pat the 400g firm tofu dry with paper towels. Cut the tofu into evenly sized cubes.

Heat a pan over medium-high heat and add cooking oil, enough to coat the bottom. Place the tofu cubes into the hot pan and pan-fry until all sides are golden brown. Once golden, remove the fried tofu from the pan and set aside.

Trim the 4 stalks of leek and slice them diagonally into pieces.

In a bowl, combine 2 tablespoons soy sauce, 1 teaspoon white pepper, 1/4 teaspoon salt, 1 tablespoon oyster sauce (or vegan oyster sauce), 1 teaspoon dark soy sauce, and 1/2 teaspoon sugar. Add 120ml of water to the mixture and stir well to combine all ingredients.

In a separate small bowl, mix 1 tablespoon cornstarch with 2 tablespoons water to create a slurry.

In the same pan used for tofu (or a clean pan), add 2 tablespoons shallots oil. Add 2 pcs star anise to the oil and sauté briefly for about 30 seconds to infuse flavor. Then, add the sliced leeks and stir-fry until softened, about 3-5 minutes.

Return the fried tofu cubes to the pan with the sautéed leeks and star anise. Pour the prepared sauce mixture over the tofu and leeks. Bring the mixture to a simmer.

Once simmering, slowly pour the cornstarch slurry into the pan while stirring continuously until the sauce thickens to the desired consistency.

The Leek Braised Tofu is now ready to be served.
