Peel the onion and slice it. Set the sliced onion aside.

In a separate bowl, combine the brown sugar, mirin, soy sauce, and Korean plum syrup (or the substitute of 1 tablespoon water + 1 teaspoon apple cider vinegar). Mix these ingredients well until fully combined, then set the sauce aside.
Heat a little oil in a large pan or skillet over medium-high heat. Add the sliced onions to the hot pan and cook for 1 minute. Then, add the minced garlic and continue to cook for another minute until the garlic becomes fragrant.

Add the ground beef to the pan with the onions and garlic. Break the ground beef into small pieces as it cooks. Once the beef is about 30% cooked (lightly browned but still some pink), pour the prepared sauce over the beef mixture. Let the mixture simmer, stirring occasionally, until the sauce reduces and evaporates. This step takes a little time but is crucial for flavor development.

Once the sauce has reduced and coated the beef, drizzle with sesame oil and give it a final mix.

Assemble your bowl by placing rice at the bottom. Top with the prepared ground beef bulgogi. Garnish with chopped scallions and sesame seeds. Serve immediately with kimchi or radish kimchi, or a vegetable of your choice. Enjoy!
