Cut the beef chuck roast into thin strips, removing any excess fat. Place the beef strips into the bottom of your slow cooker.

In a medium bowl, whisk together the beef broth, soy sauce, sesame oil, dark brown sugar, minced garlic, and crushed red pepper (if using). Pour this mixture over the beef in the slow cooker.

Cover the slow cooker and cook on the LOW setting for 6 hours.

After 5 hours of cooking, carefully remove 1/4 cup of the broth from the slow cooker. In a small bowl, whisk the corn starch into the removed broth until smooth. Pour this cornstarch slurry back into the slow cooker and stir well to combine. Re-cover and continue cooking for the remaining 1 hour.

During the last 30 minutes of cooking, add the broccoli florets to the slow cooker. Stir to combine with the beef and sauce. Re-cover and cook for the final 30 minutes, or until the broccoli is tender-crisp.

Serve the slow cooker beef and broccoli hot over your choice of white or brown rice.
For an added touch, garnish with sesame seeds and sliced green onions before serving.
