In a large mixing bowl, combine the ground pork, shredded cabbage, chopped green onions, minced fresh ginger, minced garlic, and soy sauce. Mix thoroughly by hand until all ingredients are well combined.

Lay out a wonton wrapper on a clean surface. Place about 1 1/2 tablespoons of the meat filling onto the center of the wrapper. Use the back of a spoon or your fingers to spread the filling evenly across the wrapper, leaving a small border around the edges.

Place a second wonton wrapper directly on top of the first wrapper with the filling. Gently press the two wrappers together, especially around the edges, to seal the filling inside and form a double-layered dumpling. Repeat this process with the remaining filling and wonton wrappers.

Heat the Chosen Foods avocado oil in a large non-stick skillet over medium-high heat. The oil should be hot enough that a drop of water sizzles immediately.

Carefully place the assembled dumplings into the hot pan, meat-side down. Do not overcrowd the pan; cook in batches if necessary. Pan-fry for 4-6 minutes, or until the meat is cooked through and the bottom wonton wrapper is golden brown and crispy.

Flip the dumplings and continue to pan-fry for another 4-6 minutes, or until the second wonton wrapper is also golden brown, bubbly, and crisp. Remove the cooked dumplings from the pan and place them on a wire rack set over a baking sheet to drain any excess oil and keep them crispy.

While the dumplings are cooking, prepare the spicy mayo sauce. In a small serving bowl, combine the Chosen Foods classic mayo, Sriracha, finely minced dill pickle, freshly squeezed lemon juice, and chopped chives. Stir until all ingredients are well combined.

Arrange the pan-fried smashed dumplings on a serving platter around the bowl of spicy mayo sauce. Garnish with fresh lemon wedges and additional chopped chives. Serve immediately and enjoy!
