In a large skillet, heat the butter and olive oil over medium-low heat. Add the thinly sliced yellow onions and cook, stirring frequently, for 15 to 20 minutes, or until they are very soft and have turned a deep golden-brown color.

Stir in the minced garlic and dried thyme. Cook for about 30 seconds, until the garlic becomes fragrant. Add the Worcestershire sauce and soy sauce, stirring well to ensure the onions are evenly coated.

Add the chilled cooked rice to the skillet. Break up any clumps with your spoon. Stir-fry the rice for 3 to 5 minutes, allowing it to heat through and become lightly toasted.

Pour in the beef or vegetable broth and stir thoroughly to combine. Continue to cook for another 2 to 3 minutes, or until most of the liquid has been absorbed by the rice. Season the fried rice with salt and black pepper to taste.

If using, sprinkle the shredded Gruyère or mozzarella cheese evenly over the rice. Cover the skillet with a lid and cook for 1 to 2 minutes, or until the cheese is melted and bubbly. Garnish with fresh chopped parsley and serve hot immediately.
