Add butter to a large wok or skillet over medium-high heat and let it melt.

Add the day-old rice to the melted butter in the pan. Fry the rice, stirring occasionally, until heated through and slightly browned, about 5-7 minutes. Remove the rice from the pan and set it aside.

In the same pan, add the whisked eggs. Flash fry the eggs, stirring quickly, until they are cooked and lightly scrambled. Break them up into smaller pieces with your spatula.

Add the raw shrimp to the pan with the cooked eggs. Sear the shrimp, stirring occasionally, until they are cooked through and turn pink, about 2-3 minutes.

Return the previously fried rice to the pan with the eggs and shrimp.

Create a small well in the center of the rice mixture in the pan.

Pour the soy sauce into the well.

Pour the sesame oil into the well.

Sprinkle the white pepper over the entire mixture.

Sprinkle the salt over the entire mixture.

Add the chopped green onions to the pan.

Mix all the ingredients thoroughly in the pan until well combined and heated through, about 2-3 minutes.

Serve the fried rice immediately. Optionally, shape it into a dome on a plate and garnish with sesame seeds.
