In a separate medium bowl, combine the vegetable broth, soy sauce, apple cider vinegar, and liquid smoke. Whisk until well combined.

Bring a large pot of water to a rolling boil. Carefully add the shaped seitan cutlets to the boiling water. Reduce the heat to a gentle simmer and boil the cutlets for 20 minutes. Ensure they are submerged.

Carefully remove the boiled seitan cutlets from the water and let them drain on a wire rack or paper towels for a few minutes.

Heat 2 tablespoons of vegetable oil in a large skillet over medium-high heat. Once the oil is hot, add the seitan cutlets to the pan. Pan-fry for 2-3 minutes per side, or until golden brown and slightly crispy.

Serve the Seitan Chik'n immediately as a main dish, in sandwiches, or sliced into salads.
