Crack 2 eggs into a bowl. Add 1 teaspoon salt and 1 teaspoon pepper to the eggs. Whisk the egg mixture thoroughly with a fork until well combined.

Prepare three separate stations for breading: Plate 1: Mix 1/2 cup maida (all-purpose flour) and 1/2 cup corn flour. Bowl 2: The whisked egg mixture. Plate 3: 1 cup panko breadcrumbs.

While the prawns are air frying, heat 3 tablespoons oil in a pan. Add 1 tablespoon chopped ginger, 1 tablespoon chopped garlic, and 1 tablespoon chopped green chilies to the hot oil. Sauté briefly.

Add 1/4 cup chopped onions to the pan and continue to sauté until the onions are translucent and fragrant.

Pour in 1 tablespoon dark soy sauce, 1 tablespoon sriracha, 1 tablespoon honey, 1 tablespoon vinegar, and 1 tablespoon chilli oil. Add 1/2 teaspoon salt, 1/2 teaspoon pepper, and 1/2 teaspoon chilli flakes to the sauce mixture. Stir all the sauce ingredients well and let it simmer for a few minutes until it thickens slightly and the flavors meld.

Once the prawns are air-fried, add them directly to the pan with the prepared chilli garlic sauce. Toss the prawns gently to ensure they are thoroughly coated with the sauce.

Transfer the chilli garlic prawns to a serving plate. Garnish generously with finely chopped spring onion greens and a sprinkle of sesame seeds. Serve immediately.
