Preheat your oven to 200°C. Line a large sheet pan with parchment paper.

In a large bowl, combine the ground chicken, chopped red onion, harissa paste, authentic Jamaican seasoning, chopped sweet pepper, finely chopped scotch bonnet, minced garlic, minced ginger, and chopped cilantro.

Using your hands, thoroughly mix all the ingredients together until well combined and uniform.

Take portions of the chicken mixture and shape them into elongated, cylindrical kefta (kabob) shapes, about 7-10 cm long. Arrange the formed chicken kefta on the prepared sheet pan, leaving some space between them.

Scatter the sliced red onion, sliced bell peppers, and sliced chili peppers (if using) around the kefta on the same sheet pan.

Bake in the preheated oven for 15-20 minutes, or until the chicken kefta are cooked through and lightly browned, and the vegetables are tender-crisp. The internal temperature of the chicken should reach 74°C.

While the kefta and vegetables are baking, warm the tortillas according to package instructions (e.g., in a dry pan, microwave, or oven).

To assemble, spread a generous amount of the homemade roasted garlic harissa jerk sauce onto each warm tortilla.

Place 2-3 cooked chicken kefta and a portion of the roasted vegetables onto the sauced tortilla.

Top with sliced cucumber (to create a quick cucumber salad effect). Roll up the wraps tightly and serve immediately.
