Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.

In a large bowl, whisk together the melted and slightly cooled coconut oil and granulated sugar until the mixture is light and fluffy, about 2-3 minutes.

Gradually add the coconut milk to the coconut oil and sugar mixture, whisking until well combined.

In a separate medium bowl, whisk together the all-purpose flour and baking powder. Add the dry ingredients to the wet ingredients, along with the chocolate chips. Mix until just combined, being careful not to overmix the dough.

Scoop rounded tablespoons of dough onto the prepared baking sheet, leaving about 2 inches between each cookie. Gently press down on the top of each dough ball to flatten it slightly.

Bake for 10-12 minutes, or until the edges are golden brown and the centers are set. The cookies may still look slightly soft in the middle.

Remove the baking sheet from the oven and let the cookies cool on the sheet for 5 minutes before transferring them to a wire rack to cool completely. This allows them to firm up.
