Add the 3 cups of dried jamaica, 2 cinnamon sticks, and the peels from the 2 large pineapples to a large pot. Pour in 10 cups of water. Bring this mixture to a simmer over medium-high heat, then immediately turn off the heat. Allow it to steep and cool down completely, which will take at least 30 minutes. Once cooled, strain the liquid into a large bowl, discarding the solids.

While the jamaica mixture is steeping, peel and core the 2 large pineapples, then cut them into chunks. Place the pineapple chunks into a blender. Add 4 cups of water. Blend until the mixture is completely smooth. If a stronger pineapple taste is desired, add an additional 1/2 pineapple to the blend and process again. Strain the blended pineapple mixture through a fine-mesh sieve into a separate bowl, pressing on the solids to extract as much liquid as possible.

Pour the strained jamaica infusion and the strained blended pineapple into a large pitcher or beverage dispenser. Add the remaining 3 cups of water, 1 1/2 to 2 cups of granulated sugar (start with 1 1/2 cups and add more to your preferred sweetness), and 1/4 cup of fresh lemon juice. Stir the mixture thoroughly until the sugar is completely dissolved.

Add a generous amount of ice to the pitcher. If you are not adding ice, replace this volume with additional water as needed to reach the desired consistency and volume. Dice extra pineapple chunks for garnish and add them to the pitcher or individual serving glasses.

Stir the Agua Fresca once more before serving. Serve chilled in glasses with additional ice and pineapple garnish.
