Melt 4 tablespoons of butter in a large oven-safe skillet over medium heat. Add the diced onion, carrots, and celery and cook for 5-7 minutes, until they begin to soften. Add the diced mushrooms and continue cooking for another 3-5 minutes, until all vegetables are softened.

Add the remaining 4 tablespoons of butter along with the minced garlic to the skillet. Cook for 1 minute, until the garlic becomes fragrant. Stir in the Cajun seasoning, Garlic & Herb seasoning, garlic powder, onion powder, and rosemary.

Sprinkle in the all-purpose flour and stir well to combine with the butter and vegetables. Let it cook for 1-2 minutes, stirring constantly, to cook out the raw flour taste.

While continuously stirring, slowly pour in the chicken broth and half-and-half into the mixture until everything comes together nice and smooth and no lumps remain.

Stir in the chicken bouillon and a splash of Worcestershire sauce. Let the filling simmer over medium-low heat for 5-7 minutes, stirring occasionally, until it starts to thicken to a desired consistency.

Fold in the shredded rotisserie chicken and frozen peas. Taste the filling and adjust seasonings if needed.

Preheat oven to 425°F. Cut the thawed puff pastry into rounds with a biscuit cutter or cut it into squares. Arrange the cut pieces of puff pastry over the top of the filling in the skillet.

Brush the puff pastry with the beaten egg (egg wash). Then, sprinkle with fresh thyme, a little flaky salt, and cracked black pepper.

Bake at 425°F for about 20 minutes, or until the puff pastry is puffed and golden brown, and the filling underneath is bubbling.
