Preheat your oven to 325°F. Line a baking sheet with parchment paper.

In a large bowl, combine the sweetened condensed milk, vanilla extract, lemon extract, lemon zest, and lemon juice. Mix well until everything is fully incorporated.

Add the shredded sweetened coconut to the wet mixture. Mix thoroughly until the coconut is completely coated with the liquid ingredients.

Using a cookie scoop or your hands, scoop out portions of the mixture and form them into small mounds on the prepared baking sheet.

Bake for 20-25 minutes, or until the macaroons are golden brown.

Once baked, remove the macaroons from the oven and let them cool completely on a wire rack. This will take approximately 30 minutes.

While the macaroons are cooling, prepare the lemon icing. In a small bowl, whisk together the powdered sugar and lemon juice until smooth.

Drizzle the lemon icing over the cooled macaroons.
