Slice the 2 chicken breasts and place them in a bowl. Add 1 tablespoon of soy sauce, 1 tablespoon of cornstarch, and 1 egg white. Mix thoroughly until the chicken is well coated. Set aside to marinate.

In a separate bowl, combine 2 tablespoons of soy sauce, 1 tablespoon of rice vinegar, 1 tablespoon of brown sugar, and 1 teaspoon of chili flakes (if using). Return the cooked chicken to the wok with the vegetables. Add the cooked chow mein noodles. Pour the prepared General Tso sauce over everything. Toss continuously until all ingredients are well coated with the sauce and the sauce has thickened.
