Preheat your oven to 400°F. Lightly grease a mini muffin tin.

In a large skillet, brown the 1 pound of pork sausage over medium heat, breaking it apart with a spoon as it cooks. Once cooked through, drain any excess grease and set the sausage aside.

In a separate bowl, lightly scramble the 3 large eggs. You can do this in the same skillet after removing the sausage, or in a microwave-safe bowl. Cook until just set, then set aside.

In a large mixing bowl, combine the 2 cups of pancake mix with 1 1/2 cups of water. Whisk until a smooth batter forms, ensuring there are no large lumps.

Add the cooked and drained sausage, the scrambled eggs, 1 cup of shredded mild cheddar cheese, and 1/4 cup of pure maple syrup to the pancake batter. Stir all ingredients together until they are well incorporated and evenly distributed throughout the batter.

Spoon the mixture into the prepared mini muffin tin, filling each cup almost to the top.

Bake in the preheated oven for 15 to 17 minutes, or until the bites are golden brown and cooked through. A toothpick inserted into the center should come out clean.

Allow the mini McGriddle bites to cool slightly in the muffin tin before carefully removing them. Serve warm, with additional pure maple syrup for dipping, if desired.
