In a medium bowl, whisk the eggs with salt and black pepper until well combined and slightly frothy. Set aside.

Heat a large non-stick skillet over medium heat. Add 1 tablespoon of unsalted butter and let it melt and coat the bottom of the pan.

Pour half of the whisked eggs into the hot skillet. As the edges begin to set, gently push the cooked egg towards the center, tilting the pan to allow uncooked egg to flow underneath. Continue this process until the eggs are mostly set but still slightly moist on top, about 2-3 minutes.

Sprinkle 3/4 cup of shredded mozzarella cheese evenly over the eggs. Drizzle with 2 tablespoons of hot honey. Cover the skillet with a lid and cook for another 1-2 minutes, or until the cheese is melted and bubbly and the eggs are cooked to your desired doneness.

Carefully slide the hot honey mozzarella eggs onto a serving plate. Repeat steps 2-4 with the remaining butter, eggs, mozzarella, and hot honey to make the second serving.

Garnish with fresh chopped chives and an additional drizzle of hot honey, if desired. Serve immediately.
