In a large bowl, combine the 150 grams of flour, 70 grams of sugar, 100 grams of cubed cold butter, 1/2 teaspoon of vanilla extract, and a pinch of salt.

Using your fingertips, rub the butter into the dry ingredients until a crumbly mixture forms.

Pour the prepared cheesecake filling over the cooled crumble crust in the springform pan.

Evenly sprinkle the reserved 1/2 cup of crumble mixture over the top of the cheesecake filling.

Place the cheesecake in the preheated oven (180°C / 350°F) and bake for 45-55 minutes, or until the edges appear set and the center still has a slight jiggle.

Once baking is complete, turn off the oven and leave the oven door slightly ajar. Let the cheesecake cool inside the oven for 1 hour. This slow cooling helps prevent the cheesecake from cracking.

Remove the cheesecake from the oven and let it cool completely on a wire rack at room temperature.
Once completely cooled, transfer the cheesecake to the refrigerator and chill for at least 4 hours, or preferably overnight, to allow it to set fully.
