Preheat your oven to 425°F. Line a large baking sheet with parchment paper.

Place the potato halves, cut-side up, on the prepared baking sheet. Brush the cut surface of each potato half generously with olive oil. Season generously with salt and black pepper.

On the same parchment-lined baking sheet, place a small piece of butter for each potato half. Sprinkle shredded Parmesan cheese generously over each piece of butter, creating small mounds.

Carefully place each potato half, cut-side down, directly onto a mound of butter and Parmesan cheese.

Bake the potatoes in the preheated oven for 30-40 minutes, or until the bottom of the potatoes are golden brown and crispy, and the potatoes are tender when pierced with a fork.

Once baked, carefully remove the potatoes from the oven. The bottom of the potatoes should be beautifully golden brown and crispy.

Transfer a baked potato half to a serving plate. Use a knife to lightly score and fluff the inside of the potato.

Add a pat of butter into the fluffed potato. Top with a spoonful of sour cream and a sprinkle of shredded cheddar cheese.

Garnish with chopped green onions or chives. Serve immediately and enjoy your delicious crispy baked potatoes!
