Spray a large pan with cooking spray and place over high heat. Add the lean ground beef and cook, allowing it to get a crispy sear, then break it up into small pieces using a wooden spoon.

Once the beef is browned, add the diced onion. Continue to cook for 3-5 minutes until the onion softens.

Season the beef and onion mixture with smoked paprika, garlic powder, black pepper, cayenne pepper, and salt. Mix thoroughly to combine all the seasonings.

Pour in the beef stock, then add the light cream cheese, low sugar ketchup, a squeeze of mustard, and the diced pickles. Mix all ingredients well until the filling is delicious and creamy.

To assemble the roll-ups, lay one warm tortilla flat. Place approximately 1/9 of the prepared cheeseburger beef filling (about 3/4 cup) in the center of the tortilla.

Sprinkle about 2 tablespoons of the shredded low fat cheese over the filling. Fold in the sides of the tortilla, then roll it up tightly from the bottom.

Repeat the assembly process for the remaining 8 tortillas and filling.

Lightly spray the same large pan (or a clean one) with cooking spray and heat over medium-high heat. Place the assembled roll-ups seam-side down in the pan.

Cook the roll-ups for 2-3 minutes per side, or until golden brown and the cheese inside is melted. Turn carefully to brown all sides.

Serve immediately, garnished with fresh chopped parsley, if desired. These also make excellent meal prep items for later!
