Thinly slice the beef sirloin against the grain. Place the sliced beef into a mixing bowl.

To the beef, add 4 tablespoons of soy sauce, 1 teaspoon of baking soda, 2 minced garlic cloves, 1 tablespoon of cornstarch, and 1 teaspoon of ground ginger. Mix all the marinade ingredients thoroughly with the beef by hand until well combined.
Let the beef marinate at room temperature for at least 30 minutes. This is passive time.

While the beef marinates, bring a large pot of water to a rolling boil. Add the udon noodles and cook for 2-3 minutes, or according to package directions, until al dente. Drain the cooked udon noodles and set aside.

In a separate small bowl, combine 2 tablespoons of soy sauce, 1 tablespoon of oyster sauce, 1/2 teaspoon of rice vinegar, 1/2 tablespoon of brown sugar, and 2 tablespoons of water. Mix the sauce ingredients until they are well combined and the sugar has dissolved.

Heat a large pan or wok over medium-high heat. Add 1 tablespoon of vegetable oil. Once the oil is shimmering, add the marinated beef in a single layer. Cook the beef, stirring occasionally, until it is browned and cooked through, about 3-5 minutes.

Add the drained udon noodles to the pan with the cooked beef. Pour the prepared sauce over the noodles and beef.

Add the chopped scallions to the pan. Stir-fry all ingredients together for 2-3 minutes until the sauce thickens and evenly coats the noodles and beef, and the scallions are slightly softened.

Transfer the Beef Yaki Udon Noodles to serving bowls. Garnish with additional chopped scallions if desired and serve immediately.
