Heat 2 tablespoons of olive oil in a large pan or skillet over medium heat.

Add 200 grams of pancetta or bacon to the pan and cook, stirring occasionally, until it is crispy and rendered. This should take about 5-7 minutes.

Add the 2 minced cloves of garlic to the pan with the crispy pancetta/bacon and cook for 1 minute until fragrant. Be careful not to burn the garlic. Remove the pan from the heat and set aside.

While the pancetta is cooking, prepare the egg mixture. In a medium bowl, combine 2 whole eggs, 2 egg yolks, 1/2 cup of grated Parmesan cheese, and 1 teaspoon of freshly ground black pepper. Whisk the mixture well until it is fully combined and smooth.

Cook 300 grams of spaghetti according to package directions until it is al dente. Before draining, reserve 1 cup of the starchy pasta water.

Add 1 cup of the reserved pasta water to the egg mixture and whisk well until thoroughly combined. This helps temper the eggs and create a creamy sauce.

Using tongs, transfer the cooked spaghetti directly to the pan with the pancetta or bacon. Do not drain the spaghetti completely; a little pasta water clinging to it is good.

Quickly pour the prepared egg and pasta water mixture over the spaghetti in the pan. Immediately add 1/2 cup of heavy cream to the pan.

Working quickly, toss and mix all the ingredients thoroughly in the pan. The residual heat from the pasta and the pan will gently cook the eggs and emulsify the sauce, making it creamy and coating the spaghetti. Continue tossing for about 1-2 minutes until the sauce is rich and glossy.

Serve immediately, garnished with fresh chopped parsley.
