In a medium bowl, combine the thinly sliced pork with the light soy sauce, Shaoxing wine, cornstarch, sesame oil, and white pepper. Mix well to ensure the pork is evenly coated. Let it marinate at room temperature for at least 15 minutes.

While the pork marinates, prepare the vegetables. Slice the onions into 1/2-inch wedges, mince the garlic and ginger, and slice the fresh red chilies if using.

In a small bowl, whisk together all the ingredients for the stir-fry sauce: light soy sauce, dark soy sauce, oyster sauce, granulated sugar, cornstarch, and water (or chicken broth). Set aside.

Heat 1 tablespoon of vegetable oil in a large wok or a large skillet over high heat until shimmering. Add the marinated pork in a single layer and stir-fry for 2 to 3 minutes, or until it is cooked through and lightly browned. Remove the cooked pork from the wok and set it aside on a plate.

Add the remaining 1 to 2 tablespoons of vegetable oil to the wok. Add the minced garlic, minced ginger, and sliced red chilies (if using). Stir-fry for about 30 seconds until fragrant, being careful not to burn the garlic.

Add the sliced onions to the wok. Stir-fry for 2 to 3 minutes, until the onions are slightly softened but still retain a bit of their crispness.

Return the cooked pork to the wok with the onions and aromatics. Give the prepared stir-fry sauce a quick re-whisk and pour it over all the ingredients in the wok.

Stir-fry for another 1 to 2 minutes, continuously tossing, until the sauce thickens and evenly coats the pork and onions. Ensure everything is heated through.

Serve the stir-fried onion with pork immediately, preferably with steamed white rice.
