Preheat your oven to 350°F and line a loaf pan with parchment paper, leaving an overhang on the sides for easy removal.

For the brownie layer: In a medium bowl, melt the 1/2 cup unsalted butter. Add 1/2 cup coconut sugar and whisk until well combined.

Crack 1 egg into the butter mixture and add 1 teaspoon vanilla extract. Whisk until the mixture is smooth and well combined.

Add 1/2 cup gluten free flour, 1/4 cup dark cocoa powder, and 1/4 teaspoon baking soda to the wet ingredients. Mix gently until just combined, being careful not to overmix.

Fold in 1/2 cup dark chocolate chips into the brownie batter. Set the brownie batter aside.

For the banana bread layer: In a separate large bowl, add 1/2 cup melted butter or olive oil. Add 1/2 cup coconut sugar and whisk until combined.

Mash the 2 ripe bananas thoroughly with a fork until mostly smooth. Add the mashed bananas to the wet mixture and stir to combine.

Crack 2 eggs into the banana mixture and add 1 teaspoon vanilla extract. Whisk until well combined.

Add 1 1/2 cups gluten free flour, 1 teaspoon baking soda, and 1 teaspoon cinnamon to the wet ingredients. Mix until just combined, again, do not overmix.

Fold in 1/2 cup dark chocolate chips into the banana bread batter.

Pour half of the prepared banana bread batter into the lined loaf pan, spreading it evenly.

Carefully spoon the brownie batter evenly over the banana bread layer in the loaf pan.

Top with the remaining banana bread batter, gently spreading it to cover the brownie layer.

Bake in the preheated oven for 50-60 minutes, or until a wooden skewer inserted into the banana bread portion comes out clean. The brownie center may still be slightly gooey.

Remove the loaf from the oven and let it cool in the pan for at least 15 minutes before lifting it out using the parchment paper overhang. This allows the loaf to set and prevents it from breaking.

Allow the loaf to cool slightly further on a wire rack before slicing. Serve warm with a pat of butter and a sprinkle of flaky sea salt, if desired.
