In a large bowl, combine the mashed boiled potatoes, 1 teaspoon salt, 1 tablespoon granulated sugar, 1 teaspoon active dry yeast, 1 egg, and 1 cup warm milk. Mix all ingredients thoroughly until well combined.

Gradually add 3 cups of all-purpose flour to the mixture, mixing as you go. Add 3 tablespoons of melted butter and continue to mix. Knead the dough until it becomes smooth.

Cover the dough with a lid or plastic wrap and let it rest in a warm place for 1 hour to rise.

While the dough is rising, prepare the filling. Heat 2 tablespoons of olive oil in a pan over medium heat. Add the chopped onion and sauté until softened, about 3-5 minutes.

Add the minced garlic and sauté for another minute until fragrant.

Add 1 pound of ground beef to the pan. Season with 1 teaspoon salt, 1 teaspoon black pepper, 1 teaspoon paprika, and 1 teaspoon cumin. Cook the ground beef, breaking it apart, until it is browned.

Pour in 1/2 cup of water. Continue to cook, stirring occasionally, until all the water has evaporated.

Remove the beef mixture from the heat and let it cool completely. Once cooled, add 1 cup of mozzarella cheese to the beef mixture and mix well.

After the dough has rested and risen, gently punch it down to release the air. Divide the dough into 8 equal pieces. Roll each piece into a smooth ball.

Take one dough ball and flatten it into a disc. Place a generous amount of the prepared beef and cheese filling in the center of the flattened dough. Carefully gather the edges of the dough around the filling and pinch them together tightly to seal, forming a round pocket. Repeat this process for the remaining dough balls and filling.
Preheat your oven to 350°F. In a small bowl, whisk together 1 egg yolk and 1 tablespoon of milk to create an egg wash. Place the assembled potato bread pockets on a baking sheet lined with parchment paper. Brush the tops of each pocket generously with the egg wash.
