Place a large pot over medium heat.

Pour the 4 cups of low sodium chicken broth into the pot.

Add the 2 cloves of minced garlic and 1 tablespoon of grated ginger to the broth.

Stir in the 1 tablespoon of soy sauce and 1 teaspoon of sesame oil.

Bring the broth mixture to a gentle simmer, stirring occasionally.

Once simmering, carefully add the 12-15 store-bought wontons and the 1 head of chopped bok choy to the pot.

Cook for 3 to 5 minutes, or until the wontons float to the surface and are cooked through. The bok choy should be tender-crisp.

Remove the pot from the heat.

Stir in the 1/4 cup of chopped cilantro.

Ladle the soup into serving bowls. Garnish each serving with 2 tablespoons of chopped green onions and a drizzle of chili oil, if desired. Serve immediately.
