Preheat your oven to 350°F (175°C). Line a 4-cup muffin tin with paper liners or grease it thoroughly.

Wash, peel (if desired), and grate the 1/2 apple into a medium-sized mixing bowl. You should aim for about 1/2 cup of grated apple.

To the bowl with the grated apple, add the 1 cup of all-purpose flour, 2 tablespoons of honey, and 1/2 cup of milk.

Sprinkle in 1/2 teaspoon of ground cinnamon. You can add a little more or less depending on your preference for cinnamon flavor.

Using a spoon or spatula, gently mix all the ingredients together until just combined. Be careful not to overmix; a few lumps are perfectly fine and will result in tender muffins.

Evenly spoon the muffin batter into the prepared muffin tin, filling each cup about two-thirds full.

Bake the muffins in the preheated oven for about 18 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Once baked, remove the muffin tin from the oven and let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely. These muffins are best enjoyed warm.
