Cut the 1 pound block of mozzarella into four equal blocks. Set them aside.

Prepare your breading station: Place breadcrumbs in one shallow bowl, all-purpose flour in a second shallow bowl, and whisk the 3 eggs in a third shallow bowl to create an egg wash.

Season the breadcrumbs: To the bowl with breadcrumbs, add 1 teaspoon salt, 1 teaspoon garlic powder, 1/2 teaspoon paprika, 1/2 teaspoon dried parsley, 1/2 teaspoon onion powder, 1/2 teaspoon black pepper, 1/4 teaspoon cayenne pepper, and 1 tablespoon brown sugar. Whisk thoroughly until all seasonings are well combined with the breadcrumbs.

Coat each mozzarella block: First, dredge each mozzarella block in the flour, ensuring it's fully coated. Next, dip the floured mozzarella into the egg wash. Finally, coat it thoroughly in the seasoned breadcrumbs. Repeat this entire coating process (flour, egg wash, breadcrumbs) once more for each mozzarella block to create a double coat for extra crunch.

Place the double-coated mozzarella blocks on a plate or baking sheet and freeze for 30 minutes. This step is crucial for preventing the cheese from melting too quickly during frying.

While the mozzarella is freezing, prepare the hot honey sauce. In a small bowl or mug, combine 1/4 cup hot honey, 1/4 teaspoon salt, 1/4 teaspoon garlic powder, 1/8 teaspoon paprika, 1/8 teaspoon dried parsley, 1/8 teaspoon onion powder, 1/8 teaspoon black pepper, 1/16 teaspoon cayenne pepper, and 1/2 teaspoon brown sugar. Mix well. (You will add a small amount of hot oil to this later).

Heat the cooking oil in a deep pan or Dutch oven over medium-high heat until it reaches 350°F. Use a kitchen thermometer to ensure accuracy.

Carefully place the frozen mozzarella sticks into the hot oil. Fry for 1 to 2 minutes, flipping halfway through, until they are golden brown and crispy on all sides. Do not overcrowd the pan; fry in batches if necessary.

Remove the fried mozzarella sticks from the oil and place them on a cutting board or serving plate lined with paper towels to drain excess oil. Immediately add about 1 tablespoon of the hot frying oil to the hot honey sauce mixture prepared in Step 6 and stir to combine.

Generously drizzle the prepared hot honey sauce over the fried mozzarella sticks. Flip the sticks to ensure both sides are coated. For serving, add an extra drizzle of hot honey on top.
