Place the shredded pork into a bowl. Add 1 tablespoon of soy sauce, 1 tablespoon of cooking wine, and 1 tablespoon of starch. Mix all ingredients thoroughly until the pork is well coated.

Let the pork marinate for 10 minutes.

While the pork marinates, prepare the vegetables and aromatics: Cut the 2 green peppers into small pieces. Slice the 3 cloves of garlic. Slice the 3 pieces of ginger. Cut the 5 dried chilies into small sections.

Heat a wok or large pan over high heat. Pour 1 bowl of oil into it and heat until it reaches approximately 175-190°C (70% hot). Add the marinated pork into the hot oil and stir-fry until the pork changes color and is cooked through, about 3-5 minutes. Remove the fried pork from the pan and set it aside, leaving the remaining oil in the pan.

Add the sliced garlic, sliced ginger, and dried chili sections to the remaining hot oil in the pan. Stir-fry until fragrant, about 1 minute.

Add the chopped green peppers to the pan. Stir-fry until the green peppers are slightly softened, about 2-3 minutes.

Return the pre-fried pork to the pan with the vegetables and aromatics. Add 1 tablespoon of salt, 1 tablespoon of cumin, 1 tablespoon of chili powder, 1 tablespoon of white sesame, and 1 tablespoon of oyster sauce.

Stir-fry all the ingredients evenly for a short period, about 2-3 minutes, to ensure everything is well combined and heated through.

Transfer the spicy stir-fried shredded meat to a serving dish and serve immediately.
