Peel the 300 grams of sweet potato.

Cut the peeled sweet potato into chunks.

Steam the sweet potato chunks until they are soft, which typically takes about 10-15 minutes.

Transfer the steamed sweet potato to a bowl and mash it until it is smooth. Ensure there are no lumps.

Add 30 grams of sugar, 1/2 teaspoon of salt, and 10 grams of melted butter to the mashed sweet potato. Mix these ingredients thoroughly until well combined.

Add 1 egg yolk to the mixture and mix again until fully incorporated.

Add 100 grams of tapioca starch to the bowl.

Mix the ingredients, initially with a spatula or spoon, then knead by hand until a smooth dough forms. This should take about 3-5 minutes.

Take a small portion of the dough (about 25-30 grams) and roll it into a ball.

Flatten the ball slightly and create a hole in the center to form a doughnut shape. Repeat this process for the rest of the dough.

Choose your cooking method:

For Frying: Heat oil in a pan to 180°C. Carefully place the shaped doughnuts into the hot oil. Fry for 5-7 minutes, flipping occasionally, until the doughnuts are golden brown. Remove the fried doughnuts from the oil and drain any excess oil on a paper towel-lined plate.

Alternatively, for Air Frying: Preheat an air fryer to 180°C. Place the shaped doughnuts in the air fryer basket, ensuring not to overcrowd. Air fry for 10-12 minutes, shaking the basket halfway through to ensure even cooking and browning.

Once the doughnuts are warm, coat them generously with sugar.

Serve and enjoy immediately.
