Take the pork belly and cut it into small, bite-sized cubes.

Place the cubed pork belly evenly into the baskets of an air fryer. Cook until crispy and well-browned. (Approximate air fryer settings: 190°C for 15-20 minutes, shaking halfway, or until desired crispiness is achieved).

While the pork belly is cooking, prepare the honey-soy glaze. Place a frying pan on a cooktop over medium heat.

Add the garlic ginger paste, soy sauce, honey, and water to the frying pan. Stir the ingredients with a wooden spoon to combine.

Bring the mixture to a simmer and allow it to cook and reduce until it thickens into a glaze, stirring occasionally. This should take about 5-7 minutes.

Once the pork belly is cooked and the glaze has thickened, transfer the crispy pork belly pieces from the air fryer into the pan with the simmering glaze.

Using tongs, toss the pork belly thoroughly in the pan to ensure each piece is fully coated with the sticky honey-soy glaze.

To serve, spoon the cooked rice into bowls.
