Bring a large pot of salted water to a rolling boil over high heat.

Add the pasta to the boiling water and cook according to package directions until al dente. Before draining, reserve 1 cup of the starchy pasta water. Drain the pasta and set aside.

While the pasta is cooking, melt the butter in a large skillet or pan over medium heat.
Add the minced garlic to the melted butter and sauté for 1-2 minutes, until fragrant but not browned.

Pour in about 1/4 cup of the reserved pasta water into the skillet with the garlic. Stir and let it simmer for 30 seconds.

Add the heavy cream to the skillet and bring it to a gentle simmer. Cook for 2-3 minutes, stirring occasionally, until the sauce slightly thickens.

Reduce the heat to low and gradually stir in 1 1/2 cups of shredded Parmesan cheese until it is fully melted and incorporated into a smooth sauce. Season with salt and black pepper to taste.

Add the cooked pasta to the skillet with the cheese sauce. Toss thoroughly to ensure every strand of pasta is coated. If the sauce is too thick, add a splash more of the reserved pasta water until it reaches your desired consistency.

Stir in the chopped fresh parsley.

Serve immediately, garnished with additional shredded Parmesan cheese and fresh parsley.
