In a small saucepan, combine the pitted and halved fresh cherries with 1/4 cup of water. Bring to a simmer over medium heat and cook for 5-7 minutes, or until the cherries have softened and released their juices. Remove from heat and let cool slightly.

Once cooled, mash the cherries lightly with a fork or potato masher to extract more juice. Strain the cherry mixture through a fine-mesh sieve into a bowl, pressing on the solids to extract all the liquid. Discard the solids. You should have about 1/2 cup of cherry juice.
In a large pitcher, combine the fresh mint leaves, grated fresh ginger, fresh lime juice, and agave nectar. Muddle the ingredients gently with a muddler or the back of a spoon to release the flavors of the mint and ginger. Be careful not to over-muddle the mint, as it can become bitter.

Add the prepared cherry juice to the pitcher with the muddled ingredients. Stir well to combine.

Fill four serving glasses with ice cubes. Divide the cherry-mint mixture evenly among the glasses. Top each glass with chilled sparkling water. Garnish with extra fresh mint leaves and a fresh cherry, if desired. Serve immediately.
