Preheat your oven to 375°F (190°C).

In a large skillet, heat the olive oil over medium heat. Add the chopped yellow onion and red bell pepper. Sauté for 5 minutes, stirring occasionally, until the vegetables begin to soften.

Add the frozen cooked meatballs to the skillet with the vegetables. Continue to cook for 5 minutes, stirring occasionally, until the meatballs are heated through.

Pour in the sweet and sour sauce and add the drained pineapple chunks. Stir to combine all ingredients. Bring the mixture to a gentle simmer and let it cook for 5 minutes, allowing the flavors to meld.

While the meatballs are simmering, prepare the hoagie rolls. Place them on a baking sheet.

In a small bowl, combine the melted butter and garlic powder. Brush the inside of each hoagie roll with the garlic butter mixture.

Place 2 slices of provolone cheese inside each buttered hoagie roll.

Spoon a generous amount of the hot sweet and sour meatballs and vegetables into each hoagie roll, over the provolone cheese.

Top the meatballs in each roll with a sprinkle of shredded mozzarella cheese.

Bake the hoagie rolls in the preheated oven for 10 to 15 minutes, or until the cheese is melted and bubbly and the rolls are lightly toasted.

Carefully remove the cheese melts from the oven. Garnish with fresh chopped parsley before serving hot.
