Cut the watermelon into smaller, manageable chunks. Place the watermelon chunks into a blender and blend until completely liquefied. Strain the blended watermelon through a fine-mesh sieve lined with cheesecloth into a clean bowl or container to separate the juice from the pulp. Press on the solids to extract as much juice as possible. You should aim for approximately 750 ml of watermelon juice. Set the watermelon juice aside.

In a pot, combine 500 ml of water with the 200 g of agar-agar powder. Heat the mixture on a stove over medium heat, stirring continuously with a spatula or spoon, until the agar is fully dissolved and the mixture comes to a boil. This should take about 5-7 minutes.

Carefully pour the hot, dissolved agar solution into the prepared watermelon juice. Stir thoroughly to ensure the agar is evenly distributed throughout the juice. Allow the mixture to cool down completely at room temperature (approximately 1-2 hours) until it sets into a firm gel.

Once the watermelon-agar mixture has set into a firm gel, cut it into 2-3 cm cubes. Place the gel cubes into a freezer bag and freeze them solid until completely frozen. This will take a minimum of 4-6 hours, or preferably overnight.

Transfer the frozen gel cubes from the freezer bag into a fine-mesh sieve that is lined with cheesecloth or a coffee filter. Place the sieve over a clean bowl. Allow the frozen gel to thaw slowly at room temperature or in the refrigerator. As it thaws, a crystal clear liquid will drip into the bowl below. This is your clear watermelon liquid. This process can take several hours.

To assemble each cocktail, take a serving glass and fill it with ice cubes. Pour approximately 120-150 ml of the freshly prepared clear watermelon liquid over the ice. Add 60 ml of Haitian Clairin, or adjust to your taste preference. Garnish the cocktail with a strip of watermelon rind and a small sprig of fresh mint. Serve immediately and enjoy.
